Zucchini Cinnamon Oatmeal Muffins

We're whipping up a batch of delicious zucchini muffins from Camp Counselor Tierney, courtesy of her sister's famous recipe!

We are a homeschool family and we love to BAKE! We are always testing out new recipes together but 1 recipe we always go back to is our favorite Zucchini Muffins!


  • 1 C flour
  • 1 C shredded zucchini
  • 1/2 C brown sugar
  • 1/2 C sugar
  • 2 eggs
  • 1 C melted butter
  • 1 tsp cinnamon
  • 1/2 C quick oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt


  • 1 tbsp room temperature butter
  • 1 tbsp brown sugar
  • 1 tbsp quick oats
  • 1/2 tbsp flour


  1. Mix all dry ingredients in a bowl. Add your shredded zucchini (make sure you squeeze out all excess water with cheese cloth or a paper towel) and mix into your dry ingredients.
  2. Add all wet ingredients and mix together.
  3. In a separate bowl add your topping ingredients together until you get a nice clumpy mixture!
  4. Pour the muffin mixture into pre-greased baking tins.
  5. Crumble the topping over the tops with your hands. 
  6. Bake at 325 for 20 minutes.
