We're whipping up a batch of delicious zucchini muffins from Camp Counselor Tierney, courtesy of her sister's famous recipe!
We are a homeschool family and we love to BAKE! We are always testing out new recipes together but 1 recipe we always go back to is our favorite Zucchini Muffins!
Ingredients
- 1 C flour
- 1 C shredded zucchini
- 1/2 C brown sugar
- 1/2 C sugar
- 2 eggs
- 1 C melted butter
- 1 tsp cinnamon
- 1/2 C quick oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Topping
- 1 tbsp room temperature butter
- 1 tbsp brown sugar
- 1 tbsp quick oats
- 1/2 tbsp flour
Instructions
- Mix all dry ingredients in a bowl. Add your shredded zucchini (make sure you squeeze out all excess water with cheese cloth or a paper towel) and mix into your dry ingredients.
- Add all wet ingredients and mix together.
- In a separate bowl add your topping ingredients together until you get a nice clumpy mixture!
- Pour the muffin mixture into pre-greased baking tins.
- Crumble the topping over the tops with your hands.
- Bake at 325 for 20 minutes.
