Simple Homemade Strawberry Ice Cream

Making ice cream at home is one of the easiest and tastiest treats you can whip up with your littles each summer.

For our final Mess Hall, Camp Counselor Leslie is here to share her simple, fool-proof recipe for homemade strawberry ice cream. 

 Ingredients

  • 2 C heavy whipping cream
  • 1 can sweetened condensed milk
  • 1 tsp vanilla
  • Pinch of salt
  • 1/4 C freeze dried strawberries (ground down to fine powder)
  • 1/2 C finely chopped fresh strawberries

Instruction

  1. Pour heavy whipping cream into a cold bowl and whip for 3-5 minutes until it begins to stiffen. There should be little peaks when you pull the mixer away.
  2. In a separate bowl combine condensed milk, vanilla, salt, and strawberry powder. Mix well and add to the whipping cream bowl.
  3. Stir with a big spoon until everything is combined. Fold in fresh berries.
  4. Pour mixture into a loaf tin with a cover (fabric wrap, plastic wrap, container lid, etc.) and place in freezer for 4-6 hours (or overnight)
  5. When serving, let sit on counter for a few minutes before scooping.
